cheerios bars

So, I went a little crazy when the Easter candy went on sale.  Okay, a lot crazy. Finding myself with an abundance of Peeps, homemade cereal bars seemed like a healthy compromise. :)


Yield: 16 large bars (or One 9  by 13 inch pan)
120 calories per bar
Active time: 5 minutes
Total time 5 minutes

ingredients
30 Peeps, about 4 cups
3 tablespoons unsalted butter
6 cups of Multi-Grain Cheerios (or a cereal of your choosing)
Cooking spray

preparation
1. Cut the Peeps into medium sized pieces.



2. On medium heat, melt the butter and the Peeps, stirring frequently with a lightly greased spatula to form a thick paste.


3. Remove the saucepan from the heat and add the Cheerios, stirring thoroughly to coat the cereal with the melted Peeps.  


4. Pour the mixture into a well-greased 9 by 13 inch pan and use the spatula to evenly press the mixture down into the pan. Cover with sprinkles, if desired.




5. Allow to cool completely before cutting.
